When it comes to cooking, one secret ingredient I absolutely love is – you guessed it – wine! π·π Whether it’s deglazing the pan for a rich sauce or simmering into a hearty stew, wine infuses dishes with an incredible depth of flavor.π₯π
Tonight, I’m sharing my culinary adventures with a delicious red wine reduction over seared steaks. π₯©π·The way the wine harmonizes with the sizzling steaks is nothing short of magical.ππ
Remember, the golden rule of cooking with wine – always use a bottle you’d happily drink. After all, good food deserves good wine! π·β¨

Ingredients:
Two 8-ounce steaks (your choice of cut, but ribeye or strip steaks work well)
Salt and pepper to taste
2 tablespoons olive oil
1 small shallot, finely chopped
2 cloves of garlic, minced
1 cup good quality red wine (Cabernet Sauvignon works great)
1 tablespoon unsalted butter
Fresh thyme or rosemary for garnish
Instructions:
Prepare the Steaks: Allow your steaks to come to room temperature. Season both sides of the steaks generously with salt and pepper.
Sear the Steaks: Heat the olive oil in a skillet over medium-high heat. Once the skillet is hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare (or to your preferred doneness). Remove the steaks from the skillet and let them rest on a plate.
Prepare the Sauce: In the same skillet, add the chopped shallot and minced garlic. SautΓ© until they become fragrant and slightly translucent.
Deglaze the Pan: Pour in the red wine, making sure to scrape off any bits stuck to the bottom of the skillet. This is called deglazing and it ensures all those delicious flavors are incorporated into the sauce.
Reduce the Sauce: Allow the wine to simmer and reduce by half. This should take about 4-5 minutes. The sauce will thicken slightly.
Finish the Sauce: Once the wine has reduced, turn off the heat and stir in the butter. This will give the sauce a nice glossy finish.
Serve: Pour the red wine reduction over the rested steaks. Garnish with fresh herbs and serve immediately. Enjoy your delicious seared steaks with a red wine reduction!
